RECIPE of the Week!

Hearty leafy greens like kale are the perfect partner for meaty mushrooms, and this side is a delicious served with wild fish, chicken or lean beef!


Kale with Mushrooms

  • 1 tablespoon(s) olive oil
  • 1 tablespoon(s) unsalted butter
  • 1/2 cup(s) diced onion
  • 1 container(s) (8-ounce) sliced cremini mushrooms
  • 1 bag(s) (10-ounce) prewashed kale
  • 1/2 teaspoon(s) kosher salt
  • Freshly ground black pepper, to taste

Directions

  1. Heat olive oil and unsalted butter in a large deep skillet over medium-high heat. Add diced onion and sliced cremini mushrooms.
  2. Sauté until onion begins to soften and mushrooms are lightly browned, about 4 minutes. Stir in kale; keep stirring until kale is crisp-tender and bright green, about 5 minutes.
  3. Season with salt and freshly ground black pepper to taste.
